Instant Oatmeal Two Ways

Okay, so maybe there’s nothing exciting about instant oatmeal. I know a bowl of plain, mushy oats from a box aren’t enough to lure me out of bed in the morning but hear me out.

When we were in Palm Springs our Airbnb host had graciously stocked our kitchen with a few breakfast fixings: granola, fresh fruit and yogurt. Since my girl and I are still kicking it dairy free yogurt was out for me, so I went to grab a few things to make myself breakfast while we were there. At home I usually have smoothies or eggs for breakfast, but I didn’t have the benefit of a full kitchen in this place. All I had was a fridge, a kettle and a toaster oven.

Challenge accepted.

Here’s where the instant oatmeal comes in. I grabbed a box of mixed, whole grain instant breakfast cereal. It was filled with oats, quinoa flax, flax, barley and chia seeds — and nothing else. No flavours (artificial or otherwise), sweeteners or any other additives. I also grabbed a small packet of almond butter, raw nuts, a small tetra box of almond milk and a few extra pieces of fruit and berries to super power my bowls. Each morning I used the cereal’s blank canvas as inspiration to create a delicious, nutritious and filling breakfast that would get me through to lunch.

Here are the two best combinations I came up with to power-up a bowl of instant oatmeal. These aren’t so much recipes as ideas to keep in mind when you’re staying in hotels or apartments that have limited kitchen resources. Depending on your toppings you may not even need to have a fridge! I used a little of this and a little of that until I got it right, but tried to include measurements here to give you an idea of ratios.

Muelsi-Style Soaked Instant Oatmeal (pictured above)
Serves 1

Equipment needed: box grater (I borrowed one from our Airbnb host), fridge

Ingredients:

1 package of plain, unsweetened instant oatmeal/breakfast cereal
1/2 an apple, grated
1/4-1/2 cup almond milk
Juice from 1/2 a small orange
Sea salt
Toppings: banana, raspberries, raw almonds, granola, honey, almond milk

Put it together:

1. Before you go to bed, combine dry cereal with a pinch of sea salt, the grated apple and orange juice. Pour over almond milk to cover the cereal and apple mixture. Cover and place in fridge over night.

2. When you’re ready to eat fluff cereal with a fork and add toppings.

3. Enjoy!

Strawberry Almond Butter Oatmeal
Serves 1

Equipment needed: kettle, fridge (if using almond milk)

Ingredients:

1 package of plain, unsweetened instant oatmeal/breakfast cereal
1 banana
Cinnamon
1/4 cup almond milk
1 tbsp almond butter
1/4 cup granola
3 large strawberries

Put it together:

1. Prepare cereal according to package directions (I always use less water than calls for because I don’t like my oatmeal runny). Mash banana into oatmeal, add cinnamon and mix well to combine.

2. Top with almond milk, almond butter, granola and strawberries.

3. Enjoy!
