Here’s where I’m at with holiday prep: tree is up, shopping is (almost) done, wrapping station is ready to rock and I’m starting to plan what to bring to the four (yes, four!) Christmas dinners that we attend each year a.k.a.¬†the best part.

We’ve already established that I’m not one for restriction around the holidays, and well, I’m not one for “healthifying” a recipe either if it means compromising on taste. So while I’m not about to blend spinach into the gingerbread, I’ve found that recipes that use whole, plant-based ingredients¬†to be the most delicious while also still being at least a little nutritious.
